Prairie Blintz

Yield: 4 Servings

We prefer orange marmalade… this is one of our favorite breakfasts.


  • 3 Eggs
  • 1 Cup Cottage Cheese
  • 2 Tbsp. Oil
  • ¼ Cup Flour
  • ¼ tsp. Salt
  • Jam/Jelly
  • Powdered Sugar


  1. Beat together eggs, cheese, and oil. Add flour and salt stirring just till blended.
  2. Bake on hot non-stick griddle till golden on each side. (These are quite delicate, so give them time to firm up and lightly brown before trying to turn, or they will tear.)
  3. Spread with jelly and sprinkle with powdered sugar.
