In Support of Weeknight Dessert

My sweet sister brought me several bags of freshly picked berries from Arkansas when she visited for the Fourth of July. I stumbled upon an overlooked bag of blueberries in my freezer and feverishly began searching for a way to use them.

This little delight fit the bill: Blueberry Cheesecake Galette

I also happened across a single pie crust in said freezer, so I was in business.

I actually cut the dough in half and halved the ingredients list and made a perfect pie for two. It was so excellently crusty. The cheesecake is just enough to cut that cloyingly sweet taste you usually smother under in a regular old blueberry pie. (The other half of dough was later used with some blackberries and equally delicious results.)

The technique of putting a pan on a pan was kind of fun and resulted in that wonderfully crispy crust.

I followed all the directions except that I used my own pie crust just because it was laying in the freezer needing to be used.

Do yourself a favor and make this.
