Egg Whites!

Did you make Eggs Benedict for breakfast. Yay! Good for you. Wasn’t it bliss? I told you! And now you are the master of the egg!

Oh no, I have several leftover egg whites. What am I gonna do!

Chill baby. Literally.

I don’t eat egg white omelets. If you do, hoorray, you are set. But if you are like me, and you have these egg whites, it doesn’t seem right to trash them, even though I’ve seen Anne Burrell and other chefs do just that, “thank you for coming”, some food items, that makes sense. Meanwhile, the rest of us don’t want to waste real food.

Quick before you forget, drop those whites into an ice cube tray if you have one, or some other small spot, like a take out thingy that had dressing in it and freeze it. Then when it’s frozen pop into a zipper bag (each chunk is one egg white.) They freeze and re-use really well. Do it now before you forget.

Later I will give you a bunch of recipes you can use them in. Believe me, you will feel like a really smart cookie if you have some stashed whites that you can grab for macaroons, spiced nuts, pavlova, gin fizzes, Eton Mess (OMG, Nigella rules!), etc.
