Date Pumpkin Pie

Ingredients

  • Single Pie Crust
  • Date Layer
  • 8 oz. pitted Dates, chopped
  • 3/4 C. Water
  • 1/3 C. firmly packed Brown Sugar
  • 1/4 C. Butter
  • 1/2 C. Walnuts, chopped
  • 1/2 tsp. Cinnamon
  • Filling
  • 2 Eggs
  • 1 1/2 C. solid pack Pumpkin
  • 1 C. Evaporated Milk
  • 1/2 C. Sugar
  • 1/2 C. firmly packed Brown Sugar
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. ground Ginger
  • 1/2 tsp. ground Nutmeg
  • 1/4 tsp. Salt
  • 1/8 tsp. Cloves

Instructions

  1. Line a 9" pie plate with crust. Chill.
  2. Preheat oven to 450 degrees.
  3. Combine dates and water in saucepan; cook over medium heat until mixture comes to a boil and dates have softened.
  4. Add 1/3 cup brown sugar and butter. Stir to blend. Remove from heat. Stir in nuts and cinnamon. Cool while preparing filling.
  5. Beat eggs lightly in medium bowl; add pumpkin, milk, sugars, cinnamon, ginger, nutmeg, and cloves. Stir to blend.
  6. Spoon date nut mixture into unbaked pie crust. Pour in filling.
  7. Bake at 450 for 10 minutes. Reduce oven temperature to 350. bake an additional 45-50 minutes or until knife inserted in center comes out clean. Cool to room temperature before serving.
