Ingredients

  • 12 oz. Dates, chopped
  • 1/3 Cup Sugar
  • 1/3 Cup Water
  • 1/2 Cup Nuts, chopped
  • 1 Cup Brown Sugar
  • 1/2 Cup Butter
  • 1 Egg
  • 1/2 tsp. Vanilla
  • 1 3/4 Cup Flour
  • 1/4 tsp. Salt

Instructions

  1. Place dates, sugar and water into small saucepan over medium heat. Stirring constantly, cook until slightly thickened. Stir in nuts. Cool.
  2. Mix brown sugar, butter, egg and vanilla until smooth. Stir in flour and salt.
  3. Divide into halves. Roll each into an 11" X 17" rectangle. Spread half of the date filling over each. Roll up tightly beginning at 11" side. Wrap in plastic wrap and refrigerate overnight. (If you have a paper towel tube, slide your roll inside to keep the roll round.)
  4. Preheat oven to 400 degrees.
  5. Cut rolls into 1/4" slices. Place 1" apart on a parchment paper or silicone sheet covered cookie sheet. Bake 10 minutes. Remove immediately from cookie sheet.
  6. Makes 5 dozen.
