After weeks of chili and potato soup and wintery casseroles, I crave something bright and herby. Thank you pesto. Don’t worry though, just because you don’t have a garden exploding with fresh basil doesn’t mean you can’t indulge.
I ran across this recipe for Parsley Pesto years ago and have returned again and again for a wonderful dose of summer. AND, happily, you can buy a big bunch of parsley cheaply any time of the year. I will confess that I never buy pine nuts for my pesto because I’m a cheapskate; I started subbing walnuts or almonds ages ago.
I recommend keeping a batch of this in the fridge at all times. Besides tossing with pasta which you can do any night of the week for a really delicious supper, it also wakes up any sandwich too.
Oh, and I ran across this lasagne recipe that uses pesto but haven’t tried it yet. If you do, let me know. You can go all in with strictly pesto, or just add a pesto layer in your regular go-to recipe for a twist on the norm. Point being that pesto is happy to step into many dishes for you and take the dull out of the gray wintry days. Give it a try.
